This month, Proof is decking the halls — or more accurately, the bar — as it transforms into a Christmas cocktail bar called Miracle on 1st Street for a whole month.
Proof is the first and only bar in Western Canada to host a Miracle pop-up, a concept that sees bars adopt special holiday cocktail menus and decor for around a month at Christmastime. The first Miracle pop-up took place in a New York City bar five years ago and quickly proved to be a popular concept. Now, Christmas fans can find Miracle pop-ups around the world (including at four bars in Canada).
So what can you expect at a Christmas cocktail bar? For starters, Proof’s entire space is going to look very festive decked out in traditional holiday decorations.
The bar will also forego its usual drink menu for nearly 20 different Miracle and Sippin’ Santa cocktails with holiday-inspired names, ingredients and/or glassware. Guests can sip on drinks like a Christmopolitan (made with vodka, dry vermouth, elderflower, spiced cranberry sauce, lime, rosemary and Absinthe mist) or a Kris Kringle Colada (made with dark Jamaican rum, allspice liqueur, cynar, pineapple juice, lime juice and cream of coconut) . There’s even a hot cocktail called Bad Santa — served in a Santa mug, naturally — that’s made with apple cider, Manzanilla sherry, applejack, cinnamon syrup, popcorn and bacon butter, lemon and baked apple bitters. In terms of food, Proof will still be serving its usual menu of small plates, but there will also be a few special food offerings just for this pop-up.
Proof’s Miracle on 1st Street pop-up runs from November 23 to December 23, so don’t miss your chance to check it out — after all, you don’t want to end up on Santa’s naughty list.
